Today, I am thrilled to present the very first video on Jeanette’s Healthy Living, produced by two of my incredibly creative kids, Kyle and Alex. This video (at the end of this post) is especially meaningful because my youngest son, Alex, is making popsicles for a friend with cancer – he gets it. He has been beyond his age from a young age and I continue to witness the depth of his ability to empathize with people who he doesn’t really even know.
With this video, I am creating a Kids Cooking Channel on my blog which will highlight my kids…what they’re trying to make in the kitchen and other activities they’re up to. I can’t wait to see the creative juices my kids come up with. I am mind-boggled by how quickly kids pick up on all the hi-tech stuff. What might take me weeks to grasp, they have figured out in a matter of minutes.

Hello, my name is Alex and I’m 10 years old. Before I worked on this project, I was on the couch sleeping and doing things basketball-related. I’ve grown up eating things that are a little different than other kids, and only get cheeseburgers and chicken fingers once in a while. While other kids eat those things, I eat gluten free with healthier ingredients. One of my favorites is a Hot Black Bean Salsa Dip my mom makes. I’ve also grown up as the youngest of 4 boys – however I am not a push-over.
As a side note, you will probably notice a white duck in the video. His name is Steve Jobs, and he is our blog mascot. He is named after the late Steve Jobs because he’s a genius. Don’t be surprised if he makes some kind of appearance in our future videos.
Hi, I’m Kyle and I’m 17 years old. Before this summer, I applied for a few jobs here and there, but failed to get any of them, so I’ve spent most of my summer so far eating, sleeping, and running. I run for the Cross Country team at my school, and I’ve learned that the work I do in the off season is just as important as what I do during the season. However, as a runner, I’ve also learned that a good diet is important to keep myself in the best shape possible.
Luckily, I’ve been blessed with a mom who’s not all that bad of a cook. Since I was a kid, my mom has been feeding me palak paneer and pasta puttanesca on a regular basis, while most other kids are eating chicken fingers and pizza. Then, when we learned that Alex had a gluten allergy, my mom started making food that was even more exotic and healthier than before. Now we’re constantly being fed things such as kohlrabi home fries, salad with avocado dressing, and Baked Avocado with Egg and Miso “Butter” (one of my favorites).
So, to say the least, I haven’t exactly had to worry about my diet for quite a while. Which is why I was especially excited to help my mom out when she offered me and my brother Alex the chance to start a Kids Cooking Channel on her blog. Seeing that I have little else to do this summer, I can’t wait to get started in the kitchen, both filming and cooking, while also hopefully learning a thing or two or along the way.
Which brings me to this first video and recipe of the Kids Cooking Channel: Healthy Mixed Berry Popsicles. Every week, my mom makes popsicles for her friend with cancer because they are gentle on the mouth sores that may result from chemotherapy. This week though, my little brother Alex decided that he wanted to help out, so that’s what you’ll see in the video. As my mom said, Alex has a heart beyond his years, and is very passionate when it comes to caring for others, so I think making this video really meant a lot to him.

Mixed Berry Popsicles for Cancer
Ingredients
- 1/2 cup pomegranate juice
- 1 tablespoon coconut oil
- 1 1/2 cups frozen mixed berries
- 3/4 cup non-fat or low-fat Greek yogurt
- 3/4 cup infant brown rice or oatmeal cereal
Instructions

Place all ingredients in a blender and puree until smooth. Pour into popsicle molds and insert popsicle sticks in center of each popsicle mold; freeze 5 hours or longer.

To remove popsicles, place mold in a hot water bath for a few minutes and gently rock each popsicle stick back and forth to remove popsicles from mold.

To store, place popsicles in a freezer bag in a single layer.

Thanks Shirley. Steve Jobs the duck is my youngest son’s idea – he really admires Steve Jobs. The baby cereal adds some extra nutrition (I used brown rice cereal).
