Egg Potato Bites are packed with protein for a easy on-the-go breakfast. The secret ingredient in these portable breakfast bites is cottage cheese, which is naturally high in protein.Â
I made these egg potato bites for a friend undergoing cancer treatment. She is on a low fiber/low-residue diet, and has been experiencing mouth sores, and nausea, but needs to eat more protein-rich foods. The cottage cheese in this recipe adds protein on top of the eggs. I pureed the cottage cheese so it would blend into the egg smoothly.
This basic recipe is fairly bland because that is how my friend wanted it. She loves potatoes, so I added them to this recipe. However, these egg potato bites can be easily embellished with herbs, spices and additional ingredients if you like.
Additional add-in ingredients might include:
- minced scallions
- minced cilantro
- dried oregano
- dried thyme
- cooked chopped spinach (well drained)
- cooked chopped kale
- cooked chopped Swiss chard
- cooked chopped broccoli
- cooked chopped cauliflower
- cooked red bell or green pepper
- sautéed leeks
- sautéed onions
- chopped ham
- chopped turkey
Leftover roasted or cooked vegetables make a great addition to these egg potato bites.
A silicone muffin tin makes removal of these egg potato bites easy. I still spray the inside of the muffin tin with cooking spray before adding the egg mixture.
You can customize each cup if you like. The ones below have leftover chopped ham and scallions in them.
These protein-packed bites are great for on-the-go breakfasts. They are also a nice addition to brunch when you’re entertaining.
Egg Potato Bites
Ingredients
- 8 large eggs
- 1 cup low-fat cottage cheese pureed
- sea salt to taste
- 8 ounces potato peeled, cooked, chopped
- 2 ounces swiss cheese or your favorite cheese shredded
Instructions

Preheat oven to 325 degrees.

Spray 12 muffin tins well with cooking spray. (Silicone muffin tins work especially well.)

Whisk together eggs, cottage cheese and a pinch of salt. Add potatoes. Divide among cups. Sprinkle cheese on top.

Bake for 25-30 minutes until firm.
Recipe Notes
You can customize individual egg muffins by adding different ingredients to each cup, e.g., cooked spinach, scallions, ham, turkey
