Start your day off with this Breakfast Smashed Avocado Tomato Toast with Fried Poached Egg – it will keep your tummy full all morning long. I love savory breakfasts, especially ones that combine different textures and temperatures. Crunchy toast with creamy smashed avocado, topped with a warm fried or poached egg and cool juicy tomatoes are the ultimate combination. This avocado toast is packed with protein, fiber, healthy fat, vitamins and minerals.

A few weeks ago, we hosted my husband’s cousin and niece from Taiwan during their stay in the U.S. and I had the pleasure of introducing them to all sorts of new foods. Every meal was like an adventure, from granola with yogurt to barbecue chicken – foods that are so common to us, yet so foreign to them.

One morning, I made this Breakfast Smashed Avocado Tomato Toast with a Fried Poached Egg on top, inspired by something similar that I ordered from a local restaurant a while back.

In Taiwan, avocado is often served as a sweet drink, a smoothie of sorts from what our relatives told us. So, this savory breakfast with avocado was new and different. I simply smashed some avocado with a little lemon juice and sea salt, spread it on toast, topped it with a lightly fried egg, and then added a few slices of tomatoes on top. I had a batch of Sous Vide Poached Eggs in the refrigerator and lightly fried them just to firm them up a bit, but you can just fry up some eggs or use poached eggs.

Our guests really enjoyed this breakfast smashed avocado tomato toast topped with a fried poached sous-vide egg, and I loved introducing them to this new way of enjoying avocado.

Breakfast Smashed Avocado Tomato Toast with Fried Poached Egg

Ingredients

  • 2 slices gluten-free or whole grain toast
  • 1 avocado
  • 1 wedge lemon
  • sea salt to taste
  • 2 poached or fried eggs
  • 1 tomato sliced
  • sea salt
  • black pepper

Instructions

  1. Mash avocado with juice from lemon wedge and sea salt to taste. Spread on top of toast. Top with fried egg and fresh tomato slices. Season with a little salt and fresh ground pepper.

Recipe Notes

I lightly fried Sous Vide Poached Eggs but you can just use regular poached eggs or fried eggs. Broil the tomato on top if you like.

      I actually did fry a poached egg, but the poached egg was prepared using a special technique called sous vide. For an easier approach, fry or poach an egg depending on your preference.

    Jeanette,looking forward to fixing this in the morning! My hubby is a tax account and right now I see him very little. Therefore, I like to be dure and fix a high protein, low carb breakfast. (diabetic) This am he had a low carb tortilla with avacado smashed and spread instead of mayo…a free ranged home grown egg cooked with some chunky salsa, 2 small slices of venison sausage (very lean) and some sharp cheddar. Other than the salsa, I didn’t have tomato on it. He never knows when he will get lunch or when he will get home in the evening!!!! Anything else you could suggest to give him a variety? Been trying to make sure there is flavor to go with the restricted diet. Your breakfast is much simper and would be a change up but still put it in a tortilla. He usually grabs it and heads out the door! LOL

      Judy – I love your tortilla idea with salsa, venison sausage and sharp cheddar – and there’s nothing like a home grown egg! It is a busy time of year with taxes due this week.     This is exactly what I eat for breakfast every morning! Sometimes I add a bit of hot sauce in the avocado mash and I add a tiny bit of grated cheese under the egg! Such an amazing way to feel full but not bloated.
