These Healthy Main Course Salads are packed with lots of whole ingredients that are good for you and will satisfy your appetite.
This week, I’m turning to some of my favorite hearty, healthy salads and soups to start off the year on a healthy note. These salads are packed with real, whole ingredients ~ whole grains, greens, veggies, fruits and nuts. They’re hearty and satisfying, and could easily be main course salads. These would make a great dinner, and leftovers would be perfect for lunch throughout the week.

Happy New Year Jeanette! What a gorgeous selection of colors and flavors you have assembled for us. I love the idea of a poached egg on salad — what a delicious way to work in a little extra protein. All the best to you and your beautiful boys in 2015! (was thinking of you, we have started visiting University campuses… 😀 )
