Instant Pot Colombian Shredded Pork cooks in just 30 minutes. This versatile shredded pork is delicious in tacos, burrito bowls, nachos, arepas, and empanadas. My kids love Latin American food, so I decided to try making a Colombian style pulled pork recipe in my Instant Pot. This Colombian style shredded pork is similar to pernil but simpler. The pernil recipe I usually make includes citrus juices, oregano and cilantro. This Instant Pot Colombian shredded pork is simply seasoned with cumin, garlic and onion. Achiote powder provides some red coloring to the pork.
I made a rub and marinated the pork overnight. To keep cooking time shorter, I cut the pork shoulder into 1 1/2″ slices.
The Instant Pot is wonderful for meats that usually take an hour or more to cook because it shortens the cooking time to about 1/3 of the normal stove-top time. It takes about 15 minutes for the Instant Pot to reach full pressure, so I’ve found the Instant Pot provides an advantage for recipes that take at least 30 minutes. Otherwise, you might as well cook whatever you’re making on the stove.
This Instant Pot Colombian Shredded Pork takes just 30 minutes to cook until tender. Shred with a pair of forks and you’re in business.
My kids love Chipotle style burrito bowls and this Instant Pot Colombian Shredded Pork is perfect as one of the toppings (pictured below is a burrito bowl I made for my son’s afternoon snack with shredded pork, refried beans, avocado, salsa, red onion and cilantro served on top of rice. The meat would also be delicious stuffed in arepas or empanadas, and tacos, or on top of nachos.
Instant Pot Colombian Shredded Pork
Ingredients
- 1 teaspoon paprika
- 1 teaspoon ground achiote for coloring
- 2 teaspoons ground cumin
- 1 tablespoon granulated garlic
- 2 teaspoons sea salt
- 1 teaspoon black pepper
- 1 onion thinly sliced
- 3 pounds boneless pork shoulder cut into 1 1/2" thick slices
- 1 cup dark beer I used Guiness
Instructions

In a small bowl, mix together paprika, achiote, cumin, garlic, salt, and pepper. Rub on all sides of pork slices. Add onions and toss. Cover and marinade in refrigerator overnight.

When ready to cook, place pork in Instant Pot. Add beer. Cook on high pressure for 30 minutes. Natural release for 15 minutes, then release pressure. Select "Cancel." Remove pork from Instant Pot. Select "Saute" and reduce sauce for 7-8 minutes. Season to taste with salt and pepper.

Shred pork using two forks. Pour reduced sauce on top and serve with tacos, arepas, burrito bowls or nachos.
