I know some of you may be wondering why I’m posting a bunch of Healthy Slow Cooker Dinner Recipes when it’s almost Spring. Well, to be honest, I wish it really was almost Spring, but here in the Northeast and many parts of the country, we are still buried in snow! I cannot wait for all the snow to melt. As I write this post, I still have a four foot high bank of snow right outside my front door and my backyard is covered with a blanket of snow that doesn’t look like it’s going to melt anytime soon.
This has been one long and tough winter for many folks, and it seems the season for comfort foods just keeps extending itself. So, for all of you who are still “chillin’ out” (sorry, I just couldn’t help myself), and need some healthy slow cooker inspiration, check these recipes out.
Although it seems hard to believe Spring will be here anytime soon, I know it must be around the corner. Meanwhile, I’m still cooking up cozy comfort food in my kitchen.
Note: For those of you who are gluten-free, I’ve made notes next to recipes to adapt them to be gluten-free. Serve with gluten-free bread, pasta, and tortillas to meet your needs.

Even as I’m gathering eggshells to boost the calcium in the raised beds where I hope to plant tomatoes, I’m not so sure winter will ever leave. My slow cooker rarely makes it back down to the basement where it lives because I keep wanting warming foods. This is a tremendous resource–thanks for including my Greek Chicken Tacos!

Slow cooker recipes are not only winter food. They are great in the summer when you don’t want to turn on the oven. Wrap taco ingredients in lettuce, put that BBQ meat on a salad. Pasta is eaten year round here! So much cheaper than running the oven when it is 90 plus degrees outside.
