Gluten-Free Buffalo Chicken Nuggets

I know what you’re thinking…what are chicken nuggets doing on a healthy living blog. Well, for all you football fans, Super Bowl Sunday is this weekend, and buffalo wings are one of the most popular foods that are eaten that day. In fact, according to the National Chicken Council, Americans are expected to eat 1.25 billion chicken wings (that’s 100 million pounds!) over Super Bowl weekend. Also, did you know that Super Bowl Sunday is the second biggest eating day of the year after Thanksgiving?

So, I’m posting this healthier Buffalo Chicken Nuggets recipe for all of you who want to get your Buffalo Chicken Wing fix without all the calories. These chicken nuggets are made with boneless chicken breast marinated in hot sauce, then they are coated with light crispy gluten-free crumbs and baked, so you will get all the flavor you expect in Buffalo wings without the guilt.

I’ve tried different store-bought gluten-free breadcrumbs over the past year but haven’t really found too many I’ve liked. I like a lighter coating that can be baked with good results, so I’ve been making my own breadcrumbs from gluten-free bread ends, crushed crispy rice cereal and cornflakes.

Recently, Mary’s Gone Crackers sent me a box of gluten-free goodies to try out, including their gluten-free Savory Crumbs, made with organic, gluten-free, vegan, non-GMO brown rice, quinoa, flax seeds and sesame seeds. These crumbs are made with the same ingredients as their crackers and, unlike bread crumbs, are flaky and very light.

Last week, I tried them on top of some Roasted Cauliflower which I served alongside Pomegranate Chicken with Walnuts. The boys liked the addition of a light crunchy topping.

This weekend, I tried the Savory Crumbs as a coating for these Gluten-Free Buffalo Chicken Nuggets and my little guy loved them. I only used 1 tablespoon of hot sauce in the first batch, and found it wasn’t flavorful enough, so I doubled the amount of hot sauce in the next batch. My boys enjoyed these little chicken nuggets with honey mustard (2 parts honey to one part dijon mustard), but if you like, try serving them with my healthier blue cheese dressing or Adventures of a Gluten-Free Mom’s dairy-free ranch dressing.

These Chicken Nuggets would be a nice addition to any Super Bowl spread, along with a few Dips, a big pot of Chili and a simple green salad.

My 9-year old has served as the taste tester for the assortment of goodies that Mary’s Gone Crackers sent us, and so far his favorites have been the Onion Crackers, Chipotle Tomato Pretzels, ‘N’ Oatmeal Raisin Cookies, and Savory Crumbs. What I like about Mary’s Gone Crackers’ product line is that everything is baked using whole ingredients like quinoa, amaranth, millet, chia seeds, flax seeds and sesame seeds.

    Thanks so much for the effort on making gluten free diets enjoyable. Right after my son got custody of his 4 kids we learned that the boy was autistic and was put on a gluten free diet. So not only was I raising kids again but I had to totally learn how to cook all over again. So glad I stumbledonto your site.

    Hi, I’d like to thank you for this recipe. My brother has been having a rough time throughout his life dealing with Celiac disease and only recently has he been able to enjoy some of the foods I eat due to how popular gluten-free diets have become. He’s had numerous medical problems including a close call with spinal meningitis a couple of Christmas’ ago.

    For the longest time, I didn’t quite understand what he was going through and the fact that I managed to not have Celiac disease maybe caused him some resentment towards me and I just can’t help but try to do everything I can to find out ways to help him enjoy his life more, or being able to feel some sense of normalcy. Chicken nuggets may not seem like a big deal, but I think being able to eat something that won’t potentially cause harm to you is a big deal, and for that I thank you.

      Thanks for your note Chris. I came up with these chicken nuggets for my 9-year old who is on a gluten-free diet. I can relate to what you’re saying about your brother. When my youngest son was found to be allergic to wheat, it was really tough when his brothers were eating foods he could not have. As a mother, that was really hard to watch, so I guess you could say I had a huge motivation to find foods that tasted like and reminded him of foods he used to enjoy. Foods we take for granted like chicken nuggets, pizza and pasta all of a sudden are not accessible to those with gluten allergies or intolerances. Fortunately, there are a lot of healthy, good gluten-free products available these days so those with celiac or gluten intolerance can enjoy the foods everyone else does, and often they eat more healthy. I have to say that my youngest son is now the healthiest one in the family.

    Thank you for the recipe! It looks delicious! I am the only gluten free member of my household of seven so it is very dfficult for me as a mom who is the only cook in the house to make things for my kids that contain gluten and not be able to try them. I recently decided to just make all gluten free dinners. It is so much easier than making something for them and something for me. So far it is going pretty well, they haven’t complained yet!

    these look SO GOOD. im an upstate new york native (baltimore transplant) so anything involving buffalo wings and the like is near and dear to my heart! i’ve never tried mary’s products before, i don’t think they sell them around here (or at least i haven’t seen them) so i’m super curious as to how they taste as compared to other ones i’ve tried. i’ve been on a GF panko breadcrumb kick for a while, so maybe i’ll try that as a sub. i’m so making these tomorrow, thank you so much for posting!
