Do you ever find yourself trying to figure out what to do with leftover chicken? Whether it’s leftover roasted, grilled, or poached chicken, there are so many ways to repurpose it in delicious and healthy ways.

Sometimes I actually roast two chickens at the same time just so I’ll have extra for the next meal. For the easiest roast chicken recipe, click here. Of course, you can also buy rotisserie chicken at the supermarket. I’ve asked some fabulous food bloggers what their favorite ways are to use leftover chicken.
