Roasted Beet Sweet Potato Hash is a vibrant, healthy breakfast or brunch recipe.
This entire month, Eating Rules is encouraging folks to take a pledge to go for an entire month without eating any processed foods. Over 5,000 people have taken the pledge so far. I would encourage you to take the pledge and try to eat as much unprocessed foods as you can. It’s really about building awareness.
Everyone starts out at a different point, so the idea is to eat less processed foods throughout October. Our family has come a long way. If you compared the meals that my kids ate ten years ago to what they eat today, you would see some big changes. These changes – to eat fewer processed foods, to eat a healthier diet rich in whole foods and less meat, to be more mindful of what we put in out mouths – did not occur overnight. It’s a continuous process, but so rewarding. As a parent, I feel it is my responsibility to teach my kids how to eat healthy. After all, I buy practically everything they eat.
Today, I’m contributing a recipe for a healthier hash that I made recently for my kids one weekend. Ten years ago or even five years ago, my boys would have turned their noses up at this vibrant colored hash. Oh so pretty. This sounds delicious! And kudos to you and your family for making those changes!! With all the available quick foods around us these days, it can be really hard to do that, but obviously, it can be done.

Thanks Kate! It has been quite a journey and I wish I had started when my kids were much younger. It is fascinating. My youngest grew up on unprocessed foods and my oldest grew up on lots of junk until I stayed home and started cooking some “real” meals for my kids. My oldest appreciates “real” food now that he’s in college, and fortunately, my youngest knows the difference between processed and unprocessed foods. He can actually taste the difference.

Shaina, I’ve been getting beets out of my ears in my CSA Box, so always looking for different ways to enjoy them. This hash was a nice change from my typical beet salads.
