Vegetable Fried Rice is a simple, delicious meal that reheats well and serves a crowd. I’ve been making fried rice for more than 30 years, so I know how to make really good fried rice, if I say so myself.

Fried rice is a crowd pleaser and reheats easily, so when my kids are home or we’re away on vacation with family, I make it often. In fact, on our recent summer vacation, I made this vegetarian fried rice several times for brunch.

The trick to good fried rice is to use leftover cooked rice, and to break the grains apart when adding the rice to the pan. Otherwise, you’ll end up with clumpy fried rice.

What sets great fried rice apart from good fried rice is the stir-fry sauce. In addition to soy sauce, I use Chinese rice wine, oyster sauce and sesame oil. Also, the combination of ginger, garlic and scallion serve as aromatics.

Although I only used peas in this vegetarian fried rice, feel free to add chopped red bell peppers, carrots, mushrooms, shredded cabbage, and other vegetables to the recipe. For extra protein, add some cubed firm tofu. For a vegan version, leave out the eggs.

Leftover vegetable fried rice makes a delicious lunch or dinner during the week, perfect for meal prep.

Ingredients

Stir Fry Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese rice wine
  • 1 tablespoons vegetarian oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground pepper

Fried Rice Ingredients

  • 2 tablespoons oil
  • 3 large eggs lightly beaten
  • 2 teaspoons ginger finely minced
  • 2 cloves garlic finely chopped
  • 2 scallions finely chopped
  • 4 cups cooked brown rice
  • 1 cup frozen peas

Instructions

  1. Mix together Stir Fry Sauce ingredients in a small bowl. Set aside.

Heat 1 tablespoon oil over medium heat in a large skillet or wok. Add beaten eggs and scramble, using spatula to break egg into pieces. Remove and set aside.

  1. Heat remaining tablespoon of oil in the same skillet. Add ginger, garlic, and scallions. Stir until fragrant, about 15 seconds. Add rice, using fingers to break up any clumps. Toss well; add Stir Fry Sauce and continue to toss until rice is heated through. Add peas and toss until peas are just done, about 2 minutes.

    Fried rice used to be my go-to meal…these days I am trying to cut down some carbs and eat less and less rice. This delicious vegetarian rice has me crave some again.

      I do crave rice since I grew up eating it almost every day. Cauliflower rice would work well in this recipe instead of regular rice.
