Avocado Tomato Cucumber Feta Salad is a simple, healthy and delicious summer salad that can be enjoyed at lunch or dinner. I just returned from a nine day mission trip in a small community in the Dominican Republic. Forty-nine of us built cement block walls for a community center and school lunchroom, dug ditches for a baseball backstop, and a septic hole for the local church.
Our accommodations were simple but comfortable, there was barely a trickle of cold water for a shower, and there were lots of bugs and mosquitoes. However, one luxury we experienced was a team of women from the community who took great care preparing our daily meals. Among our large group of almost 50 people, we had a few vegetarians as well as people who were allergic to gluten, egg, or dairy, so cooking for our group was no small feat.
One night I walked into the kitchen and found the head chef reviewing the next day’s menu. She went through the menu with such care, making sure there were options to meet every dietary need. The love and care that she put into this planning was much appreciated by our group.

This Avocado Tomato Cucumber Feta Salad reminds me of a salad we were served several times during our stay. It’s refreshing, healthy and delicious, and makes a nice accompaniment to almost any summer meal. Another salad we ate often was this simple Dominican Republic Green Salad (without the beets or corn).
If you’re allergic to dairy, you can leave out the feta cheese.
There was a big avocado tree on the property we stayed at, so perhaps the avocado for this salad came from that tree.
Each morning, our team would divide into four work teams to do construction work at the local church, school, community center and baseball field. We would return home for lunch, and then head back out for the afternoon. We were famished from working, so everyone always looked forward to mealtime, where we would catch up with each other and hear how each of the projects was progressing.
I am still digesting everything I saw and experienced from this Foundation for Peace mission trip, but the one thing that immediately comes to mind if the strong sense of community, where everyone jumps in to physically construct buildings the community needs and desires, and where it literally takes a village to raise all the children. This is something that I rarely witness in the U.S., but hope to inspire.
Avocado Tomato Cucumber Feta Salad
Ingredients
- 1 large avocado diced
- 1 1/2 cups cherry tomatoes halved
- 1 1/2 cups cucumber cut up
- 1/2 cup feta cheese crumbled
- 1 lemon juiced
- sea salt to taste
Instructions

Toss all ingredients together in a bowl just before serving.
