Two Easy Recipes for Salsa: Fresh Strawberry Salsa and Mango Avocado Pepper Salsa

With the weather finally turning warming and the farmer’s market opening right around the corner, I can’t wait for the casual dinners that the coming months will bring.


One of my favorite summer snacks is fresh salsa. Although I love tomato salsas, fruit salsas are a nice sweet and tangy alternative.

One of my all time favorite salsas is Fresh Mango Avocado Pepper Salsa. I first time made this salsa years ago when a class mother shared her recipe with me. I remember making a batch of this mango salsa and gobbling up the entire bowl with tortilla chips over a casual lunch with a friend. This fresh salsa has been a favorite ever since. Not only is this Mango Avocado Pepper Salsa perfect as an appetizer or snack, but it goes wonderfully with grilled chicken or fish.

This past week I spotted another fruit salsa recipe, one for Strawberry Salsa on a recipe card from Whole Foods featuring recipes with strawberries. Strawberries have been popping up everywhere, and I’ve been thinking of ways to use all these beautiful red berries. Like the Mango Avocado Pepper Salsa, this Strawberry Salsa would be wonderful as a snack or appetizer, or served on top of a piece of baked or grilled salmon.

Fresh Mango Avocado Pepper Salsa

Mango Avocado Pepper Salsa

Prep Time 20 minutes

Servings 2 cups

Ingredients

  • 1 mango diced
  • 1 red bell pepper diced
  • 1 yellow pepper diced
  • 1 avocado chopped
  • 1 small onion finely chopped
  • 3 tablespoons fresh chives minced
  • fresh chives minced
  • 3 tablespoons fresh cilantro minced
  • 2-3 tablespoons fresh lime juice or white wine vinegar

Instructions

  1. Mix all ingredients together and serve with tortilla chips, or on top of grilled chicken or fish.

Fresh Strawberry Salsa

Fresh Strawberry Salsa is a nice compliment to baked or grilled fish.

Ingredients

  • 1 pound organic strawberries diced
  • 2 kiwifruits peeled and diced
  • 1 cucumber diced
  • 1 jalapeno pepper seeded and minced
  • 2 tablespoons chopped fresh mint leaves
  • 1 tablespoon fresh lemon juice

Instructions

  1. Mix all ingredients together and serve with tortilla chips, or on top of grilled chicken or fish.

    Thank you Maria! You can't go wrong with fresh fruits and vegetables, they are naturally gorgeous and colorful. Salmon is heart healthy, a good source of omega-3's and vitamin D, and a terrific protein option.

    Thanks Kim! Fruit salsas are naturally gorgeous, with so many bright colors to play with. I have a Canon T2i and a Tamron 18-270 lens, which I'm still learning how to use.

    Thanks! I use the Canon T1i and I usually use a 50 mm 1.4 lens most of the time. I have a number of other lenses that were my Dads (he was an avid photographer). I just wish he were around to show me how to use them all. 🙁 I have been learning by trial and error and self teaching. Not always a good thing. LOL

    I would like to get a 50mm lens but haven't gotten around to it yet. I got the Tamron because I wanted a lens that could shoot both food and get closeups of my kids for family photos.
