Farmer’s Market Corn Salad features fresh corn, tomatoes, cucumbers, bell peppers and basil at their peak. I made this simple corn salad for our Dominican Republic mission trip reunion this past weekend. It was the first time our group has gotten together since our trip in early August. We bonded during the nine days we labored together, worshipped together, shared meals together, and played together. So, it was really nice to reunite and share our reflections on the mission trip with each other.
We are hopeful the work we started in El Batey will continue as other mission groups come through that community. Our group is planning on returning next summer, and making a personal investment to help the people in El Batey. Now that we have one year under our belt, we know more about what the people in El Batey need and can use. We talked about reaching out to corporate sponsors, collecting medical supplies, bringing shoes and bathing suits for the kids, and bringing a polaroid camera next time so we could leave pictures with the children of El Batey to remember us by.
There’s no question that the Dominican Republic mission trip changed each person who went in some way. Some people are thinking about changing what they do for a living, perhaps pursuing non-profit work. Many people, including myself, realize that we are physically capable of so much more than we ever thought. We are so grateful for the basic provisions we take for granted, e.g., clean, running water, paved roads, hot showers, shoes, three meals a day. We have so much that we feel compelled to give of ourselves to the El Batey community.
God’s second greatest command is to love your neighbor as yourself (Mark 12:31). It is amazing to witness how powerful love can be when a group of servant-hearted people come together with a common mission.
This Farmer’s Market Corn Salad reminds me of the fresh salads we enjoyed during our stay in the Dominican Republic. We are at the tail end of summer produce, so I am savoring every last bit of it from our local farmer’s market. Fresh corn is sweetest towards the end of the season, tomatoes are becoming scarce, and cucumbers and fresh basil will soon disappear. So, this salad features some of my favorite summer vegetables.
Sprinkle with some crumbled feta cheese if you like. This would be equally delicious served as a dip with some tortilla chips.
Farmer's Market Corn Salad
Ingredients
- 6 ears fresh corn shucked
- 2 1/2 cups fresh tomatoes chopped
- 2 cups red bell peppers chopped
- 2 1/2 cups cucumbers peeled, seeded, chopped
- 3 scallions chopped
- 1 cup basil chopped
- 2 tablespoons extra virgin olive oil
- 2 limes juiced
- 1/2 teaspoon ground cumin
- sea salt to taste
- black pepper to taste
- 1 cup feta crumbled, optional
Instructions

Boil or steam corn for 5 minutes; remove and let cool. Cut corn off the cobs and place in a large bowl.

Add tomatoes, bell peppers, cucumbers, scallions and basil. Toss gently with olive oil, lime juice, cumin, salt and pepper.

If desired, sprinkle with crumbled feta just before serving and toss.
