Ingredients

  • 6 ears fresh corn shucked
  • 2 1/2 cups fresh tomatoes chopped
  • 2 cups red bell peppers chopped
  • 2 1/2 cups cucumbers peeled, seeded, chopped
  • 3 scallions chopped
  • 1 cup basil chopped
  • 2 tablespoons extra virgin olive oil
  • 2 limes juiced
  • 1/2 teaspoon ground cumin
  • sea salt to taste
  • black pepper to taste
  • 1 cup feta crumbled, optional

Instructions

  1. Boil or steam corn for 5 minutes; remove and let cool. Cut corn off the cobs and place in a large bowl.

  2. Add tomatoes, bell peppers, cucumbers, scallions and basil. Toss gently with olive oil, lime juice, cumin, salt and pepper. 

  3. If desired, sprinkle with crumbled feta just before serving and toss.
