This Super Vegetable Blend-In Sauce is a great way to sneak in extra vegetables into your family’s meals. Stir into chili, pasta sauce, stews, and meatloaf mix for an added boost of goodness.
I have to say I hesitated before posting this recipe simply because this is not the most attractive sauce to photograph. In fact, I’m sure some people might think it actually looks kind of gross. But, I decided to post it anyway because I know there are moms like me who struggle to get their kids to eat their vegetables. You see, my pre-teenage son has been trying to play some tricks on me lately at dinnertime. Somehow he manages to be full by the time he hits the vegetables on his plate. Hmm… What’s a mother to do when you have a kid who has decided he’s not eating his vegetables anymore, at least not consistently. So, I apologize if you think this sauce looks unappetizing, but I hope you’ll thank me later for it.
There’s actually a company out there that sells pureed vegetables that can be stirred into recipes. They come in single vegetable varieties. I’ve never tried them, but this is the same idea except that my vegetable blend-in sauce has a much bigger variety of vegetables.  I scoured my vegetable drawer and made this sauce using mushrooms, carrots, celery, bell pepper, onion and zucchini. What resulted was a nutritious blend of vegetables that has proven to be extremely versatile for  every day cooking.
This Super Vegetable Blend-In Sauce is perfect for stirring into chili, spaghetti sauce, meatloaf and more. The best part is that your child is getting some extra veggies without even knowing it. 🙂
Super Vegetable Blend-In Sauce
Ingredients
- 1 tablespoons olive oil
- 1 red bell pepper chopped
- 1 carton 10-ounce mushrooms (any kind), chopped
- 1 onion chopped
- 2 stalks celery chopped
- 2 carrots chopped
- 1 zucchini finely chopped
- 4 cloves garlic minced
Instructions

Heat oil in large skillet. Add all the vegetables and cook until soft, about 15 minutes. Add a little water to prevent vegetables from sticking to bottom of pan. Transfer everything to food processor and process until almost smooth.

I do this all the time with my kids. I pureed a bunch of different veggies for different things for my picky eaters.

wonder if i could freeze this sauce and use it when i want it… ;p

I think it should freeze fine – it might be a little watery when defrosted but since it will be blended into whatever you’re making, I don’t think it should make a difference.
