This past Saturday was National Soup Swap Day. Although I had never heard of this idea until last year, I love the idea and make lots of soup all throughout the winter. Maybe next year, I’ll jump in and host a Soup Swap.
For now, I would like to share some beautiful healthy soups that I hope will inspire you to get that soup pot on the stove and start cooking. There are so many things to love about soup – a meal in one bowl, pure comfort, super easy, perfect for sharing with friends, and extremely hard to mess up. Anything goes, use your imagination.
Last year, I volunteered to teach a series of soup classes to a group of seniors at our local community center, and I am honored to have been invited back this year. It was such a rewarding experience – in a local article, one woman from the class was quoted as saying this: “Jeanette made our January and February through the horrible weather exciting and gave us something to look forward to.” That one sentence made me realize that just a little bit of my time and effort made all the difference to this one woman and hopefully others that were in the class. Totally worth it…every minute.
Here we go…Soup Time! All of these soups are vegetarian friendly (just swap out any chicken broth with vegetable broth).

Love your gorgeous Sweet Potato Coconut Curry Soup! I have a kabocha squash sitting on my counter…I think it’s going to sub for sweet potato in this soup recipe.

I am saving this – and want to work my way through them. I make soup at least twice a week in the winter. Not just because it’s healthy – it can often be made ahead of time and accommodate everyone’s schedule – and soothe the winter beast.

Haha Junia! Just think if you make a big batch, you can eat it for a week in just 5 minutes, all you have to do is rewarm it.
