This Pumpkin Peanut Butter Dip is quick and easy to make, perfect for an after-school snack with some sliced apples.

I’m always looking for healthy after-school snack ideas for my kids to help tide them over until dinnertime. The idea is to give them a nutrient dense snack, made with whole ingredients. That way, I know they’re filling up with something healthy, so even if they eat less dinner, it’s okay.

When I was a kid (and even as an adult), I would eat peanut butter and celery sticks for a snack, so today’s Pumpkin Peanut Butter Dip is a different take on that snack combination. The best part about this easy snack recipe is that it actually has a vegetable incorporated into the dip, and is served with fresh apple slices, so your child is getting a fruit and vegetable at the same time. I used organic apples because conventional apples are the #1 “dirtiest” out of all fruits and vegetables in the U.S. (meaning they have the most pesticides). The upside of serving organic apples is that you can leave the skin on, so it’s less work.

Pumpkin pie spices give this dip warm Fall flavors, perfect for this time of year when the leaves are turning color and thoughts of the holidays are around the corner.

FYI…this dip makes a great alternative to peanut butter on a piece of whole grain toast for breakfast.

Denise – I think this would keep in the refrigerator for about a week, although it might not last that long if you eat it for breakfast too.

OH. MY. GOSH. This is pure and absolute brilliance. Why have I never combined peanut butter and pumpkin? Total missed opportunity. I cannot wait to try this.

I love this! I wish I had had this recipe a few weeks ago when I had extra pumpkin left over from my pumpkin cookies. Peanut butter and apples is my favorite snack, so of course, I’ll have to try this!

Brilliant idea, Jeanette! I would probably use SunButter or almond butter in mine. Peanuts do not like me…even though I adore peanut butter! Thanks for sharing!

Sunbutter or almond butter would be great substitutes for peanut butter – I use them interchangeably.

This is another great recipe, Jeanette. It’s not a combo that I would have thought of in this way, but I like it! Will have to share it on All Gluten-Free Desserts soon. I’m like most everyone else on thinking that almond butter would be great in it. 🙂

    Thanks!

Thanks Shirley – I happened to have some peanut butter on hand, but use almond butter, sunflower butter and peanut butter interchangeably.
