Huevos Rancheros Breakfast Tacos Recipe

These Huevos Rancheros Breakfast Tacos are not only fun to eat, but they’re popping with texture and flavor.

I love Huevos Rancheros as a hearty brunch. The fresh salsa, avocado and cilantro toppings add lots of color and texture. It’s a filling meal, but healthier than the typical breakfast platter of eggs, bacon and potatoes.

Although there are lots of components to Huevos Rancheros, they are all easy to prepare. If you don’t want to make your own salsa, you can buy prepared salsa at the supermarket. Don’t like cilantro? Substitute chopped scallions or onion.

During the school week, I typically stick to quick preparations. Oatmeal, egg in a hat, yogurt parfaits and omelets make a regular appearance. Leftover Mini Frittatas are also a favorite.

But when the kids are home on break,  I like to make a big breakfast for them. Sometimes, pancakes and Strawberry Banana French toast casserole make an appearance on vacation days. I decided to try these Huevos Rancheros Breakfast Tacos on them recently.

My kids love tacos, so I thought serving breakfast taco-style would be a fun treat. These Huevos Rancheros Tacos were terrific. Not only did they fill their bellies up, but I loved the fact that some whole grains, beans and vegetables made their way onto the breakfast plate. I think a Huevos Rancheros Breakfast Rice Bowl would be terrific too, all the same toppings served over some warm (leftover) brown rice.

Huevos Rancheros Breakfast Tacos

Fresh salsa is worth making and it doesn't take much time at all.
Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes
Servings 4

Ingredients

Fresh Tomato Salsa

  • 2 cups fresh tomatoes I used cherry tomatoes
  • 1 garlic clove minced
  • 1/4 onion finely chopped
  • 1/2 jalapeno pepper seeded and minced
  • 1/4 cup fresh cilantro minced
  • a squeeze of fresh lime or lemon juice
  • salt to taste

Huevos Ranceros Tacos

  • 4 large eggs
  • 4 corn tortillas
  • cooking spray
  • 1/2 cup shredded low-fat cheese
  • 1/2 cup black beans rinsed and drained
  • 1 avocado chopped
  • 1/4 cup fresh cilantro leaves
  • non-fat Greek yogurt optional

Instructions

Fresh Tomato Salsa

  1. Put tomatoes in food processor and pulse until tomatoes are coarsely chopped. Add remaining ingredients and pulse a few more times just to combine ingredients.

Huevos Rancheros Breakfast Tacos

  1. Lightly spray each tortilla with cooking spray. Broil 2 minutes; turn tortillas over. Top each tortilla with 2 tablespoons cheese and 2 tablespoons black beans. Broil 1 minute or until cheese melts. Remove from oven.

Poach Eggs

  1. Bring a small pot of water to a boil. Reduce heat to low and carefully break each egg into the water. Set the time for 2-3 minutes, Remove with a slotted spoon.

To Serve

  1. Gently place one poached egg on top of each tortilla. Top tacos with Fresh Tomato Salsa, avocado and cilantro. Add a dollop of Greek yogurt on top of tacos if desired.

    Minus the cilantro, and with a bit of hot sauce, I could happily eat this for breakfast.

      Hot sauce is great on top of this. If you don’t like cilantro, just leave it off as you suggest or you can add some chopped scallions.

    These look amazing. Mexican breakfasts are my favorite. My very favorite is migas, but huevos rancheros come in a very close second place!
