How To Make A Fluffy Omelet with Broccoli and Cheddar Cheese

Last week, I had a discussion with Elizabeth Ward on healthy eating tips and recipe ideas that anyone can use. Eating a protein packed breakfast came up as one of the healthy eating tips. Elizabeth mentioned that eggs were a terrific source of protein at breakfast time. Although I make my son an omelet for breakfast several times a week, I rarely make myself one because I’m afraid of eating too many egg yolks. Egg yolks are actually a really good source of brain-boosting choline, so eaten in moderation, they’re very healthy.

I’ve had egg white omelets before but they tend to be rubbery. However, as I recently discovered, they can be really light and fluffy if you whip them before cooking. You can use just egg whites if you are on a strict low cholesterol diet, or you can add back an egg yolk to reap the benefits of brain-boosting choline from the yolk.

Omelets are a great way to get some vegetables into breakfast time – I almost always have extra vegetables in my refrigerator from the night before…steamed broccoli, roasted cauliflower, red bell peppers, spinach, onions. Fortunately, my son loves omelets so I’ve discovered it’s the perfect excuse for me to sneak in some vegetables at the start of his day.

Recently, OXO sent me some fun kitchen tools to play around with, which turned out to be perfect for making this Fluffy Egg White Omelet – a 3-in-1 Egg Separator, a manual Egg Beater, and a Flip & Fold Omelet Turner. I love kitchen gadgets and was able to use the Egg Separator to separate the egg yolks from the egg whites, the Egg Beater to whip up the egg whites, and the Flip & Fold Omelet Turner to flip the omelet over. I have to say the Omelet Turner is my favorite new tool – it fits underneath the omelet perfectly – that’s the trickiest part I think of making an omelet and the part I have the most trouble with (mine tend to break when I use a regular spatula).

For fun, I made a video How To Make A Fluffy Omelet using my iPhone – it’s my first time doing this, so it was a great learning experience. I edited it down to 2 1/2 minutes, so I hope you take a look and let me know what you think – you’ll see me using all my fun new kitchen tools.

Fluffy Egg White Omelet with Broccoli and Cheddar Cheese

You can leave out the egg yolk if desired. I added one egg yolk back to the whipped egg whites because egg yolks contain brain-boosting choline. Use whatever leftover vegetables you have - red bell peppers, roasted cauliflower, and tomatoes would be great too. Play around with the cheeses too.

Cook Time 10 minutes
Total Time 15 minutes
Servings 1

Ingredients

  • 2 egg whites
  • 1 egg yolk optional
  • 2 teaspoons olive oil
  • 1/4 cup steamed broccoli
  • 2 tablespoons low-fat shredded cheddar cheese

Instructions

  1. Whip egg whites until light and fluffy. Whisk egg yolk and fold into egg whites, if using. Heat oil in a small skillet on medium heat until hot. Add whipped egg whites/egg yolk mixture and spread evening in pan. Let cook until bottom of omelet is set and the edges start to cook. Sprinkle broccoli and cheese on top. Turn omelet in half. Cook until bottom of omelet is nicely browned. Flip omelet over and continue to cook until inside is cooked through and bottom is nicely browned. You may need to reduce heat to medium low to ensure inside is cooked through without the omelet getting too brown on the outside.

    Tried your instructions exactly and I do believe you’re right about the fluffiness being the whipping of the egg whites. I added roasted peppers to the filling and it was a fabulous omelette.
