These Chili-Garlic Greek Yogurt Marinated Chicken Kebabs are nice and moist. A little fresh Chimichurri Sauce is all that’s needed to add bright flavors to these grilled kebabs.
Recently, Chobani sent me some Greek yogurt to play around with and I’ve been using it in as many dishes as I can think of. You might have seen my Smoked Red Curry Coconut Chicken that I marinated in Greek yogurt and coconut milk, or my Creamy Smoked Gouda Macaroni and Cheese, where I used Greek yogurt to add extra richness and creaminess to my mac ‘n cheese.
Today, I’m sharing another recipe that uses Greek yogurt as part of a marinade. I’ve found that adding Greek yogurt to grilled chicken breast marinades helps to keep the meat nice and moist. Too often, chicken breast dries out when cooked on the grill.
Topped with a bright Chimichurri Sauce made with fresh summer herbs, these kebabs are a great way to celebrate the rest of summer!

Julie – it’s a sorghum pilaf (sorghum is gluten-free and has the texture of barley).
