Grilled Greek Salad Pizza combines all the flavors of a Greek Salad in pizza form. Have you ever tried grilling pizza? Grilled pizza is fast and easy, especially if you use flatbread as the crust. Summer grilling means minimal cooking and cleanup effort, so this recipe for Grilled Greek Salad Pizza meets both criteria. I love Greek salad and pizza so combining them into one recipe is a delicious and healthy way to enjoy both in the same bite. Sponsored by Peapod.

This grilled Mediterranean salad pizza makes a fun party appetizer or main course for summer entertaining. Feta cheese, mozzarella cheese, fresh tomatoes, roasted red peppers and kalamata olives are placed on top of whole grain naan. You can use pita bread or other flatbread too. Of course, fresh pizza dough would work too, but would require a few extra steps.

Grilled Greek Salad Pizza

Ingredients

Pizza

  • 1 whole grain naan or other flatbread
  • 1/4 cup part-skim, low-moisture mozzarella cheese shredded
  • 3 tablespoons feta cheese crumbled
  • 1/2 tomato diced
  • 1/2 roasted red bell pepper cut into slivers
  • 2 kalamata olives pit removed, cut into quarters
  • 1 teaspoon garlic minced
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon red pepper flakes
  • 1 teaspoon extra virgin olive oil

Greek Salad Dressing

  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon granulated garlic
  • salt and pepper to taste

Salad

  • 2 cups baby greens
  • 1/4 cup cucumber sliced
  • 1/4 red onion thinly sliced

Instructions

Pizza

  1. Sprinkle mozzarella cheese and crumbled feta cheese on top of flatbread. Top with tomatoes, roasted red bell pepper, kalamata olives, and minced garlic. Sprinkle with dried oregano, red pepper flakes; drizzle olive oil on top. Grill over indirect heat for 4-5 minutes until cheese is melted. Alternatively, bake in 425 oven until cheese is melted.

Greek Salad Dressing

  1. Place Greek Salad Dressing ingredients in a jar and cover; shake until blended.

Salad

  1. Toss together baby greens, cucumber and onion and dress lightly with some Greek Salad Dressing.

To Serve

  1. Place tossed salad on top of pizza. Cut into serving pieces and serve.
