White Bean and Cauliflower Soup Recipe – Comforting Soups

Nothing is more comforting than a bowl of soup.  Not only are soups super easy to throw together, but they also provide a nutritious meal for someone who’s in need of a jump start to their system.

Today, my mission was to come up with a high fiber anti-cancer soup.

Fiber is essential to a healthy digestive system, helping to ensure that toxins are eliminated from your body.  Beans, whole grains and vegetables are great sources of fiber.

I had some cannellini beans that I had cooked with onion, carrot, celery, and a strip of kombu, a sea vegetable that inhibits cancer tumor growth.  I also had some cauliflower in my fridge, a cancer fighting cruciferous vegetable, so I searched for a creamy soup and found just the right one, White Bean and Cauliflower Soup with Truffle Oil, from Richard Landau and Kate Jacoby’s Horizons: New Vegan Cuisine.  This soup is super easy to make and delicious, especially with a touch of extra virgin olive oil.
