Today, I’m celebrating my 3rd Blog Anniversary! Believe it or not, I started my blog three years ago on the 4th of July. By chance, our family sat next to a friend who encouraged me to start blogging the minute I got home from the fireworks display that night. I remember sitting at my computer at 11PM, weaving my way around the Blogger platform, choosing a template, and writing my first post. I was up until 2AM, and I was hooked.
Many of you who are fairly new followers of mine might not know that the reason I started Jeanette’s Healthy Living was to create a space that I could record foods that I was cooking for people in my community who were undergoing cancer treatment.
Over time, my blog evolved to reflect life’s happenings…pursuing my passion cooking for people with cancer who were undergoing chemotherapy and radiation treatment,
learning how to cook a soft food diet for my father-in-law that he could eat safely (he had Parkinson’s disease and lived with our family for 8 years),
and coming up with allergy-friendly recipes that my youngest son who developed food allergies and intolerances could eat and enjoy.
Today, the content on Jeanette’s Healthy Living encompasses not just these special foods that I’ve been cooking for family and friends with special dietary requirements, but lots of lighter, healthier recipes, with the hope of inspiring you, my readers, to take care of yourself through the food you feed yourself and your family. My boys have even created some kid cooking videos to help inspire you and your kids to get in the kitchen. If they can do it, you can too. I’ve also taken a crack at some cooking videos and continue to work on improving them.
I plan on continuing to pursue my passion serving others through my cooking, and growing my knowledge so that I can help more people. Don’t worry, I will still be posting recipes for the very foods that I make day to day for my family and friends. However, I plan on spending more time expanding my knowledge of how to use new and different ingredients and techniques that might further help improve my ability to prepare healthy food that’s packed with nutrients and flavor.
I had the unique opportunity to cook alongside some pretty amazing chefs last week at the Culinary Institute of America, who have been exceptionally generous sharing their knowledge. I hope to learn more from them in the coming year, and of course, by experimenting in my own kitchen on a day-to-day basis.
Thank you, my devoted readers, my blogging buddies, my family, and my friends for your devoted support over the years, and most of all, my Lord for the gifts He has given me to help serve others. It’s been an incredible journey so far, and I can’t wait to see where this all leads me!
