With all the Spring sports in full swing and the end of school coming soon, quick and easy dinners are even more of a necessity these days. I’ve learned how to take lots of shortcuts when I’m short on time. Lots of days, I have only 30-40 minutes to make an entire dinner for my family. So, dishes that can be made ahead of time, or marinated ahead of time, then thrown on the grill later are particularly popular lately.
Today, I’m thrilled to be guest posting at my friend, Carolyn’s blog, All Day I Dream About Food, and sharing this quick and easy recipe for Thai Coconut Curry Chicken. This recipe uses two of my favorite ingredients – Thai red curry paste and coconut milk. You might have seen my post on Monday for Grilled Salmon with Thai Coconut Curry Sauce. Although both of these dishes use curry paste and coconut milk, this chicken dish has an extra bonus – the Peanut Sauce.
