Mini Ham and Cheese Frittatas

Ingredients

  • 1 teaspoon olive oil
  • 1/2 cup onion finely chopped
  • 2/3 cup low sodium ham finely chopped
  • 1 large egg
  • 4 large egg whites
  • 1/3 cup low fat extra sharp cheddar cheese
  • 2 tablespoons scallions minced
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees. 

  2. Heat oil in non-stick skillet. Saute onion and ham until onion turns translucent; remove from heat and let cool.

  3. In a large bowl, whisk together egg, egg whites, cheese, scallions, thyme, black pepper and cooled ham mixture.

  4. Spray mini muffin tins well with cooking spray. Divide egg mixture among 24 mini muffin tins.

  5. Bake 20 minutes or until set.
