I cooked the eggplant separately to get it nicely browned; to make things simpler, you could cook everything together. Serve a poached egg on top, or use as a filling for an egg omelet.

2tablespoonsolive oil
1eggplantdiced
1turkey kielbasa sausage
2garlic clovesminced
1large onionchopped
8mushroomschopped
1red bell pepperchopped
Instructions
Heat 1 tablespoon olive oil in large skillet. Add diced eggplant and cook until browned on all sides. Remove. Add remaining tablespoon of oil to skillet. Add sausage, garlic, onion, mushrooms, and red bell pepper to pan. Saute until nicely browned. Return eggplant to skillet.
