Broccoli Red Pepper Egg Bites

  • 1 tablespoon olive oil
  • 2 cups broccoli florets chopped
  • 1 cup red bell pepper chopped
  • 2 scallions chopped
  • 6 large eggs
  • sea salt
  • black pepper
  • 1 teaspoon favorite dried herb blend
  • 1 cup lowfat cheddar cheese shredded
  • cooking spray


  1. Preheat oven to 350 degrees.

  2. Heat oil in large skillet. Add broccoli, red bell pepper and scallions. Season to taste with salt and pepper. Saute 1-2 minutes. Add 1 tablespoon water and cover skillet; cook until broccoli is just tender, about another minute or two. Remove to plate and let cool to room temperature.

  3. Spray non-stick mini muffin tins well with cooking spray. Divide cooked vegetables among tins. 

  4. Whisk together eggs, salt, pepper and dried herb blend. Divide egg mixture among tins.

  5. Sprinkle cheese on top of each tin.

  6. Bake for 15 minutes or until cooked through.
