Oven Dried Tomato Pesto

Serve with pasta (use reserved pasta cooking liquid to make a looser sauce) or over grilled chicken breast.

Ingredients

  • 3 cups oven dried tomatoes in olive oil drained
  • 3 tablespoons minced garlic
  • 3 tablespoons toasted pine nuts
  • 1/4 cup extra virgin olive oil
  • salt and fresh ground pepper to taste

Instructions

  1. Place all ingredients in food processor and process until almost smooth.
