Cajun Chicken Sausage Gumbo Stew

  • 2 teaspoons olive oil
  • 3 links nitrate-free chicken chorizo cut into chunks
  • 1 1/2 pounds skinless boneless chicken thighs, cut into bite-sized pieces
  • 1 cup chopped onion
  • 1 bell pepper chopped
  • 1/2 cup thinly sliced celery
  • 1 1/2 teaspoons Cajun/Creole seasoning
  • 5 garlic cloves minced
  • 1 cup low sodium chicken stock
  • 1 1/2 cups chopped tomatoes


  1. Heat oil in large pot. Add sausage and saute until browned on all sides. Remove sausage from pan with a slotted spoon; drain on paper towels. Add chicken pieces; sauté 4 minutes until lightly browned on all sides. Add onion, bell pepper, celery, Cajun seasoning and garlic; sauté for 4-5 minutes or until vegetables are tender, stirring occasionally. Add stock and tomatoes; bring to a boil. Return sausage to pan; reduce heat to medium-low, and simmer 6 minutes, stirring occasionally. Serve over steamed brown rice.
