Peanut Butter Strawberry Jam Bar Cookies {gluten-free}

  • 1 cup organic oat flour
  • 1 cup organic rolled oats
  • 3/4 cup organic blonde coconut palm sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup organic peanut butter
  • 1/4 cup organic virgin coconut oil melted
  • 1 cup organic strawberry jam


  1. Preheat oven to 375 degrees. Lightly grease 8x8 inch baking pan.
  2. Mix together oat flour, oats, coconut sugar, baking powder, cinnamon and salt in a mixing bowl. Add peanut butter and coconut oil. Mix until blended. Press half of mixture firmly in prepared pan. Spread strawberry jam on top. Sprinkle remaining oat mixture on top and pat down firmly.
  3. Bake 20-25 minutes until top is golden brown.
  4. Cool and cut into squares.
