You can mix and match the dry ingredients as you like. I recommend using high quality dark chocolate and cocoa powder such as Valrhona's.

Ingredients
1/4cupquinoa
1cupMuesli
1/4cupoats
1/4cuptoasted sesame seeds
3/4cupdried datespitted (make sure they are moist and not dried out)
1/4cupdried plums
1/4cupnut or seed butter
1tablespoonhoney
1/2cupdark chocolate chipsmelted
cocoafor dusting
Instructions
Toast quinoa in a small skillet until you start hearing popping.
Place all ingredients (including toasted quinoa) in a food processor. Process until dates are finely chopped and everything is mixed together well. If mixture seems dry, add a little more nut butter and/or honey. Mixture should just stick together when you squeeze a spoonful of it in your hands.
Make balls out of mixture, using about one tablespoon per ball, squeezing mixture together and rolling it between the palms of your hands.
Dip in melted chocolate and roll in cocoa to make truffle balls.
