  • 6 cups baby arugula
  • 2 peaches pitted, cut into slices
  • 1 cup blackberries
  • 1/4 cup goat cheese crumbled
  • 3 tablespoons walnut pieces toasted

Orange Champagne Vinaigrette

  • 3 tablespoons Orange Muscat Champagne Vinegar
  • 3 tablespoons extra virgin olive oil
  • A sprinkling of sea salt and freshly ground pepper


  1. Arrange arugula, peaches, and blackberries on four salad plates. Sprinkle with goat cheese and walnuts.
  2. Whisk together Vinaigrette ingredients. Drizzle on top of salad just before serving.

Recipe Notes

If you can't find Orange Muscat Champagne Vinegar, substitute rice wine vinegar and a few splashes of fresh orange juice.
