Fireworks Black Bean Salsa

Salsa Ingredients

  • 1 1/2 cups Black Beans rinsed and drained
  • 1/2 cup Corn Kernels fresh or frozen
  • 1/2 cup red bell pepper diced
  • 1/2 cup cherry tomatoes cut into 1/4" pieces
  • 1 medium Mango cut into 1/4" cubes
  • 1/4 cup Cilantro finely chopped
  • 1 jalapeno pepper seeded, veins removed, minced
  • 2 tablespoons Red Onion finely chopped

Dressing Ingredients

  • 1 teaspoon fresh Ginger minced
  • 2 tablespoons fresh Lime Juice
  • 2 tablespoons fresh Orange Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground turmeric
  • sea salt and fresh ground pepper to taste


  1. If using fresh corn, you can either use it raw, or cook the corn on the cob in boiling water for just a few minutes; then cut corn off the cob.

  2. Place all Salsa Ingredients in a medium bowl.

  3. In a small bowl, mix together all Dressing Ingredients.

  4. Pour Dressing on top of Salsa Ingredients and toss well.
