  • 1 cup cooked quinoa
  • 2 cups kale chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup corn
  • 1 scallion chopped
  • 1 garlic clove minced
  • zest and juice from 1 lemon
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground pepper to taste
  • freshly grated Bellevitano cheese or your favorite cheese optional (leave out for vegan version or use nutritional yeast)

Instructions

  1. Gently toss all ingredients together in a bowl.
