Orange Pomegranate Salad with Fennel Pollen and Toasted Quinoa

Ingredients

Toasted Quinoa

  • 1 teaspoon olive oil
  • 1/2 cup cooked quinoa
  • salt and pepper

Citrus Dressing

  • 2 tablespoons fresh orange juice
  • 2 teaspoons fresh lemon juice
  • 3 tablespoons flax seed oil

Salad

  • 4 ounces mixed salad greens
  • 1 Cara Cara orange peeled, sliced
  • 1 Minneola orange peeled, sliced
  • 1 Blood orange peeled, sliced
  • 1/2 cup pomegranate seeds
  • 4 tablespoons toasted almonds
  • 2 teaspoons fennel pollen

Toasted Quinoa

  • 1 teaspoon olive oil
  • 1/2 cup cooked quinoa
  • salt and pepper

Instructions

Toasted Quinoa

  1. In a small bowl, toss quinoa with olive oil; season with salt and pepper. Place in small hot skillet and toast until fragrant and slightly dried out.

Citrus Dressing

  1. In a small bowl, whisk together orange juice, lemon juice and flax seed oil

Salad

  1. Arrange salad greens on serving platter. Lay orange slices on top; sprinkle with pomegranate seeds, toasted almonds and Toasted Quinoa. Sprinkle with fennel pollen. Serve with dressing.
