Strawberry Almond Breakfast Quinoa

Ingredients

  • 1 cup quinoa rinsed
  • 2 cups plus 2 tablespoons unsweetened almond milk, divided
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon cinnamon
  • 1 cup sliced strawberries
  • 2 tablespoons sliced almonds toasted
  • 2 tablespoons shredded unsweetened coconut

Instructions

  1. Place quinoa and almond milk in a medium pot and bring to a boil; lower heat and let simmer, covered, for 15 minutes, until quinoa is done. Check to make sure quinoa does not dry out - if necessary, add more almond milk or water after 10 minutes.
  2. Stir in remaining 2 tablespoons almond milk, maple syrup and cinnamon.
  3. Divide quinoa into four bowls and top with sliced strawberries, almonds and coconut.
