Rainbow Quinoa Vegetable Bowl Salad

  • 1/2 cup cooked quinoa
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup spiralized carrots I used rainbow carrots
  • 1/2 cup red bell pepper diced
  • 1/4 cup cooked beans
  • chopped scallions
  • Your favorite dressing or lemon juice and extra virgin olive oil
  • sea salt and fresh ground pepper to taste


  1. Place quinoa, tomatoes, carrots, red bell pepper, beans and scallion in a bowl; toss with your favorite salad dressing (or just squeeze some fresh lemon juice on top and drizzle a little extra virgin olive oil on top).
