Thai Barbecue Pork Chops

These pork chops are juicy and delicious - use pork chops on the bone for best results.

Ingredients

  • 4 pounds thick pork chops on the bone

Marinade

  • 1/4 cup fish sauce
  • 4 teaspoons organic sugar
  • 4 teaspoons sweet soy sauce
  • 2 lemongrass stalks trimmed, smashed
  • 1 teaspoon ground black pepper
  • 1 teaspoon curry powder
  • 2 tablespoons chopped garlic
  • 1/4 cup chopped cilantro
  • 3/4 cup coconut milk

Instructions

  1. Put marinade ingredients in food processor and process until almost smooth.
  2. Place pork chops in a large bowl; pour marinade on top and toss to coat all sides. Marinate in refrigerator at least 6 hours or overnight.
  3. Place marinated pork chops on oiled foil-lined baking sheet. Transfer to hot grill and grill until cooked to desired doneness.
  4. Serve with Thai Sweet Chili Garlic Sauce, if desired.

Recipe Notes

If you can't find sweet soy sauce, you can make your own substitute. Simmer equal parts soy sauce and brown sugar until syrupy.
