Ingredients
Roasted Shrimp
3poundsshrimppeeled and deveined (I used Trader Joe's Wild Blue Shrimp), 15-count
1 1/2tablespoongood olive oil
3-4clovesgarlicminced
1/4teaspoonSpanish smoked paprika
1/4teaspoonred pepper flakes
1/2teaspoonkosher salt
1/2teaspoonfreshly ground black pepper
Cocktail Sauce
11ouncebottle seafood cocktail sauceI used Trader Joe's
1/2cuporganic ketchup
1tablespoonprepared horseradish
2teaspoonsGhost Chile Carrot Hot Sauce or other hot sauce
2teaspoonsfresh lemon juice
1teaspoonWorcestershire sauce
Instructions
Roasted Shrimp
Preheat oven to 400 degrees. In a large bowl, toss shrimp with olive oil, garlic, smoked paprika, pepper flakes, salt and pepper. Spread on baking sheet in a single layer. Roast for 8-10 minutes, until shrimp is just cooked through. Set aside to cool. Arrange on a platter with a bowl of Cocktail Sauce.
Cocktail Sauce
In a bowl, stir together all the Cocktail Sauce ingredients.
