Curried Tomato Soup with Lentils and Spinach

Ingredients

  • 1 quart low sodium tomato soup
  • 1 1/2 cups cooked lentils
  • 1-2 teaspoons curry powder depending on how spicy you like it
  • 3 cup baby spinach

Optional Add-Ins

  • 1 cup brown rice cooked

Instructions

  1. Put soup, lentils and curry powder in a medium saucepan.  Cook over medium heat until hot.  Stir in baby spinach and turn off heat.  Add cooked brown rice, if desired. Serve.
