Instructions
Lemon Dressing
Whisk together lemon juice, olive oil, shallot, salt and pepper.
Assemble Salad
Toss arugula and roasted beets together. Divide among 4 salad plates. Sprinkle crumbled goat cheese and walnuts on top.
Drizzle Lemon Olive Oil Dressing on top.
