Quinoa Muesli Date Plum Energy Truffle Balls

You can mix and match the dry ingredients as you like. I recommend using high quality dark chocolate and cocoa powder such as Valrhona's.

Ingredients

  • 1/4 cup quinoa
  • 1 cup Muesli
  • 1/4 cup oats
  • 1/4 cup toasted sesame seeds
  • 3/4 cup dried dates pitted (make sure they are moist and not dried out)
  • 1/4 cup dried plums
  • 1/4 cup nut or seed butter
  • 1 tablespoon honey
  • 1/2 cup dark chocolate chips melted
  • cocoa for dusting

Instructions

  1. Toast quinoa in a small skillet until you start hearing popping.
  2. Place all ingredients (including toasted quinoa) in a food processor. Process until dates are finely chopped and everything is mixed together well. If mixture seems dry, add a little more nut butter and/or honey. Mixture should just stick together when you squeeze a spoonful of it in your hands.
  3. Make balls out of mixture, using about one tablespoon per ball, squeezing mixture together and rolling it between the palms of your hands.
  4. Dip in melted chocolate and roll in cocoa to make truffle balls.
