Hot Chicken Chili Cheese Dip with the Fixin's

Crockpot Chicken Bean Chili and Chili Cheese Dip

I love adding more vegetables to chili - it's a great way to "hide" vegetables in a kid-friendly meal. This is not a spicy chili, so feel free to add more chili powder or chipotle pepper. You can always serve it with hot sauce. Serve with your favorite toppings. Chili freezes well, and leftovers make a great Hot Chili Cheese Dip for Football Sunday or as a hearty after-school snack.

Ingredients

Crockpot Chicken and Bean Chili

  • tablespoon olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 bell pepper diced
  • 4 cloves garlic minced
  • 1 pound ground chicken or turkey
  • 1 28 ounce can whole tomatoes, pureed
  • 1 15 ounce can black beans, rinsed and drained
  • 1 15 ounce can red beans, rinsed and drained
  • 1 15 ounce can white beans, rinsed and drained
  • 1 tablespoon chili powder
  • 1/4 cup fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon chipotle pepper powder

Hot Chili Cheese Dip

  • 4 cups Chicken Bean Chili above
  • 1 cup low-fat shredded cheese cheddar, Mexican blend, or your favorite mix
  • 1 avocado smashed with juice from half a lime and a pinch of salt
  • 1 to mato chopped
  • 1 scallion minced
  • pickled or fresh jalapeno slices

Instructions

Crockpot Chicken and Bean Chili

  1. Heat oil in a large pot. Add onion, carrots, celery, bell pepper and garlic; saute until onion is translucent, about 4-5 minutes. Add chicken and cook until no longer red; drain liquid.
  2. Place chicken in a slow cooker, and add tomatoes, black beans, red beans, white beans, chili powder, parsley, salt, basil, oregano, black pepper, and chipotle pepper.
  3. Cover, and cook 8 hours on Low.

Hot Chili Cheese Dip

  1. Preheat oven to 375 degrees. Scoop 4 cups of Chicken Bean Chili into a pie pan. Sprinkle with cheese. Heat in the oven for 20-25 minutes until chili is heated through and cheese is melted. Top with smashed avocado, chopped tomato, scallion and some jalapeno slices.
