Orange Pomegranate Salad with Fennel Pollen and Toasted Quinoa

Toasted Quinoa
1teaspoonolive oil
1/2cupcooked quinoa
salt and pepper
Citrus Dressing
2tablespoonsfresh orange juice
2teaspoonsfresh lemon juice
3tablespoonsflax seed oil
Salad
4ouncesmixed salad greens
1Cara Cara orangepeeled, sliced
1Minneola orangepeeled, sliced
1Blood orangepeeled, sliced
1/2cuppomegranate seeds
4tablespoonstoasted almonds
2teaspoonsfennel pollen
Toasted Quinoa
1teaspoonolive oil
1/2cupcooked quinoa
salt and pepper
Instructions
Toasted Quinoa
In a small bowl, toss quinoa with olive oil; season with salt and pepper. Place in small hot skillet and toast until fragrant and slightly dried out.
Citrus Dressing
In a small bowl, whisk together orange juice, lemon juice and flax seed oil
Salad
Arrange salad greens on serving platter. Lay orange slices on top; sprinkle with pomegranate seeds, toasted almonds and Toasted Quinoa. Sprinkle with fennel pollen. Serve with dressing.
