Spiced Pumpkin Spelt Oat Quick Bread

Servings 2 loaves

Ingredients

  • 1 1/2 cups organic cane sugar
  • 1 cup organic brown sugar
  • 3/4 cup ground flax seeds
  • 3/4 cup olive oil
  • 4 large eggs
  • 2/3 cup unsweetened soy milk
  • 1 can 15-ounce pumpkin puree
  • 1 teaspoon vanilla
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • 1 cup oat flour
  • 2 1/2 cups spelt flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup dark chocolate chips optional

Instructions

  1. Preheat oven to 350 degrees. Lightly grease two 9x5 inch loaf pans.
  2. Combine sugars, flaxseeds, oil, eggs and soy milk in a large mixing bowl; beat until thoroughly mixed together. Add pumpkin, vanilla and spices, and beat another minute. In a separate bowl, whisk together flours, baking soda, baking powder and salt. Add to pumpkin mixture and beat just until blended. Stir in chocolate chips if using. Pour batter into two prepared loaf pans. Bake 50-55 minutes until toothpick comes out clean when inserted in middle of pan.
