Skinny Pumpkin Cheesecake Dip

Ingredients

  • 1 cup pumpkin puree
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 cup 1% low-fat cottage cheese

Instructions

  1. Place pumpkin puree, maple syrup, vanilla and pumpkin pie spice in a small saucepan; heat until bubbly; remove from stove and let cool.
  2. Place cottage cheese in food processor or blender; process until smooth; add pumpkin mixture and continue processing until blended. Transfer to serving dish and sprinkle with a little extra pumpkin pie spice.
