Daniel Plan Vegetable Lentil Chicken Sausage Soup

Ingredients

  • 2 tablespoons olive oil
  • 8 cups assorted vegetables onion, carrot, celery, bell peppers, mushrooms, zucchini, cauliflower, chopped
  • 2-3 cloves garlic minced
  • salt and pepper to taste
  • 2 links 6 ounces cooked chicken sausage, chopped into bite size pieces
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 1/2 cups 15 ounces chopped tomatoes
  • 1 cup red lentils rinsed and drained
  • 8 cups chicken broth

For serving

  • fresh parsley minced, optional
  • a splash of balsamic vinegar optional

Instructions

  1. Heat olive oil in a large soup pot and sauté vegetables and minced garlic 3-4 minutes until fragrant. Season with salt and pepper. Add chicken sausage, turmeric, rosemary, thyme, and oregano; sauté another 2 minutes. Add tomatoes, lentils and chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 45 minutes to an hour, until lentils are soft. Add more broth if you like a thinner soup.

Recipe Notes

This soup tastes even better when reheated the next day.
