Ingredients

  • 3 pounds skinless boneless chicken thighs

Marinade

  • 2 teaspoons fish sauce
  • 2 teaspoons organic sugar
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 4 cloves garlic minced
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon ground cumin
  • 1/4 cup coconut milk
  • 2 tablespoons grape seed oil
  • bamboo skewers

Thai Peanut Sauce, for serving

Instructions

  1. Cut chicken thighs into 1" wide strips. Place in a large mixing bowl. Add Marinade ingredients and toss well to coat all pieces evenly. Refrigerate and marinate 2 hours.
  2. Soak bamboo skewers in water for 1/2 hour. Skewer chicken and grill until cooked through, turning over halfway through cooking.
  3. Serve with Thai Peanut Sauce.
