Everyday Classics

Today, I’m super excited to introduce you all to Everyday Classics: 68 Tasty & Essential Gluten-Free, Dairy-Free, Egg-Free and Soy-Free Recipes written by Alexa Croft of Lexie’s Kitchen. All the recipes in Everyday Classics are gluten-free, dairy-free, egg-free and soy-free, and most are also corn-free, making it a must-have resource for anyone who has food allergies, sensitivities or intolerances.

When my 11-year old son was first diagnosed with food allergies and intolerances a few years ago, I was at a loss at what to make him for breakfast, lunch, snack time and dinner. He craved foods he was familiar with, but I didn’t now how to make them without the very foods he couldn’t eat such as flour, eggs, soy and dairy. I was fortunate enough to come across Lexie’s Kitchen in my search for recipes, and I am ever so grateful to Alexa to this day for her help at a time when I was in need.

Alexa graciously offered up suggestions on what I could make my son, including her Saturday Pancake recipe (a winner!), as well as ingredients I could use to substitute for foods he was allergic to. I am thrilled that she has finally come out with a cookbook to share her knowledge and experience so that other families who are struggling to make classic recipes and family favorites can once again enjoy them.

Everyday Classics provides allergy-friendly recipes for family favorites like sandwich bread, pancakes and chicken pot pie and strawberry cheesecake. One helpful feature that this book includes is a chart listing each recipe and indicating the allergen(s) it is free of, e.g., gluten-free, dairy-free, egg-free, corn-free, soy-free, coconut-free, tree-nut free, and grain-free. In addition, vegan recipes are noted. Substitutions are also suggested in cases where recipes contain an allergen.

The Ingredients & Tools section provides an allergy-friendly list of ingredients to help familiarize the reader with items that are needed to start “making magic” in the kitchen.

Recipes are divided into the following chapters:

  1. Everyday Staples – allergy-free “foundation recipes” that are used in recipes throughout the book, e.g., Nutty Ricotta Cheese, Condensed Cream Soups, Campfire Pancake Mix, Tortillas, Loaf ‘O Bread,
  2. Breakfasts – favorites made allergy-free, e.g., Saturday Pancakes, Soaked Grain Waffles, Biscuits & Gravy
  3. Lunch & Dinner – family favorites, e.g., Chicken Milanese, Chicken Pot Pie, Chili Mac Skillet, Chicken Tenders
  4. Sweet Treats – for the sweet tooth in your, e.g.,  Strawberry Cheesecake, Sugar & Spritz Cookies, Graham Crackers, Marshmallows

I think the Everyday Staples chapter alone is reason enough to buy a copy of Everyday Classics.

Take a look at the book excerpt. You’ll see how beautifully photographed and illustrated this cookbook is.

Just to give you a taste of what Everyday Classics offers, here are some of my favorites as I perused through this book. The recipes for these can be found in the book excerpt.

Saturday Pancakes

This is one of the first recipes I made after I discovered my son was allergic to wheat. I can still remember how his face lit up after his first bite.
