This Curry Tomato Spinach Lentil Soup can be put together in minutes, using high quality, store-bought ingredients. It just goes to show eating healthy doesn’t mean difficult.
A number of years ago, I taught a series of cooking classes at our local senior community center. I had read an article about the growing trend of seniors who stop cooking for themselves, and end up buying processed foods for their meals.
Often, seniors live alone, lose interest in cooking, or just aren’t well enough to cook for themselves. With more seniors choosing to “stay put” in their community, being able to eat healthy meals as they age in place can become challenging.
This article has spurred several people to action, including one senior who holds a pot luck with friends from her hair salon. Everyone brings containers so they can bring leftovers home. What a great idea!
After reading this article, I started a cooking class series at our local senior community center to show them it’s easy to prepare healthy soups at home, even if they don’t like cooking or find it hard to cook for one person.
This Curried Tomato Soup with Lentils and Spinach is an example of an easy, healthy soup that comes together in less than 15 minutes.
Curried Tomato Soup with Lentils and Spinach
- 1 quart low sodium tomato soup
- 1 1/2 cups cooked lentils
- 1-2 teaspoons curry powder depending on how spicy you like it
- 3 cup baby spinach
- 1 cup brown rice cooked
Put soup, lentils and curry powder in a medium saucepan. Cook over medium heat until hot. Stir in baby spinach and turn off heat. Add cooked brown rice, if desired. Serve.
Read the ingredient list on store-bought soups to ensure the least amount of additives, salt and sugar; organic is best.
The perfect supper especially now that the weather has become less hot.
This is such an easy soup to put together, nutritious and very warming.
